
Chocolate fondue with fruit
A silky dark chocolate and cream fondue made in one small saucepan, served warm with strawberries, banana and grapes for dunking. Ready in 13 minutes.

Method
Wash and thoroughly dry the fruit (any water dripping into the chocolate makes it seize). Leave the strawberries whole, cut the bananas into thick rounds and pick the grapes into small bunches. Arrange on a platter.
Put the chopped chocolate in a heatproof bowl.
Heat the cream and salt in a small saucepan over medium heat for about 3 minutes, until steaming with small bubbles around the edge. Don't let it boil hard.
Pour the hot cream over the chocolate and leave it alone for 1 minute, then stir gently from the center outwards until smooth and glossy. Stir in the liqueur if using.
Pour into a warmed small bowl or fondue pot and serve straight away with the fruit and forks or skewers for dipping.
Tips
- If the fondue thickens as it cools, microwave it in 15 second bursts and stir.
- Most dark chocolate is gluten-free, but check the label for barley malt or a may-contain warning if it matters.
- Marshmallows are great for dunking but contain gelatin, so leave them out to keep it vegetarian.
