
Berry French toast
Thick brioche soaked in vanilla custard, fried in butter until crisp and golden, then piled with fresh berries, yogurt and maple.

Method
Whisk the eggs, milk, vanilla, cinnamon and sugar in a shallow dish. Halve or quarter any large strawberries.
Heat a large skillet over medium heat and melt half the butter. Dip 2 slices of brioche in the custard for about 10 seconds each side, letting the excess drip off.
Fry until deep golden and crisp underneath.
Flip and cook the second side until golden and the center feels set when pressed.
Keep warm in a low oven or on a plate under a clean kitchen towel, then repeat with the remaining butter and brioche.
Top with yogurt, berries and a drizzle of maple syrup, and dust with powdered sugar.
Tips
- Brioche is soft, so a quick dip is all it needs. Thick sourdough or white bread can soak for 20 seconds a side.
- If the outside browns before the middle sets, turn the heat down a notch.
