Method

  1. Start once your fire has burned down to glowing coals (a fresh fire needs 30 to 45 minutes to get there, so light it well ahead), and set a grate over them. You want medium heat: you can hold your hand just above the grate for 5 to 6 seconds. A grill heated to medium works too.

  2. Lay each banana on its side, curve up. Cut a slit lengthwise through the top peel and into the fruit, stopping before you cut through the bottom peel. Gently pull the sides apart to make a pocket.

  3. Stuff the pockets with the chocolate chips and marshmallows, pressing them in. Wrap each banana loosely in a sheet of foil, keeping the opening facing up.

  4. Set the bananas on the grate (or on a flat bed of coals at the edge of the fire) and cook until the chocolate melts and the marshmallows go soft.

  5. Lift off with tongs, open the foil (it's hot) and check the chocolate is melted; if not, rewrap for another minute or two. Let cool for a minute, then eat with a spoon straight from the peel.

Tips

  • Add a few chopped strawberries or peanut butter chips to the pockets. Crumbled graham crackers are classic but not gluten-free unless labeled so.
  • Most marshmallows contain gelatin, so they aren't vegetarian; look for gelatin-free ones if you need to.
  • Most mini marshmallows are gluten-free, but check the bag.
