Method
Heat the oven or toaster oven to 425°F and line a baking sheet with foil. Prep the toppings while it heats.
Lay the 12 bagel halves cut side up on the sheet and spread each with about 2 teaspoons of pizza sauce, right to the edges.
Cut the mozzarella slices into thin strips. Lay 3 or 4 strips across each bagel at slight angles like bandages, leaving a gap near the top for the eyes.
Bake until the cheese has melted and the bagel edges are golden and crisp.
Meanwhile slice the olives into rounds. Press two olive slices into the gap on each bagel and cool for a minute or two before serving.
Tips
- Don't skip the gap: the cheese spreads as it melts, and the eyes need a patch of red sauce to show up.
- For candy eyes instead of olives, add them after baking so they don't melt.
- Toast the cut sides for 2 minutes before adding the sauce if you like a crunchier base.
