The recipe in 15 seconds

Method

  1. Melt the butter in a large skillet over high heat. Add the corn in an even layer and leave it undisturbed until charred in spots, then stir and repeat.

  2. Add the jalapeño and most of the scallions and cook for a minute until softened.

  3. Turn the heat to low and stir in the mayonnaise, sour cream, Monterey Jack, half the cotija, the lime juice and half the chili powder until melted and creamy.

  4. Top with the rest of the cotija, chili powder, scallions and the cilantro, and serve warm with tortilla chips.

Tips

  • Let the corn sit without stirring to get real char; that smoky flavor is what makes it taste like street corn.
  • Crumbled feta stands in for cotija if your store does not have it.
  • Serve it cold as a salad-style dip by skipping the Jack cheese and chilling after charring.
