Method

  1. Put the red onion, chile, lime juice and salt in a bowl and leave to sit while you prep the avocados. The lime softens the onion's bite.

  2. Halve the avocados, remove the pits and scoop the flesh into the bowl.

  3. Mash with a fork or potato masher until mostly smooth but with some chunks left.

  4. Fold through the tomato and most of the cilantro. Taste and add more salt or lime; it should taste bright and well seasoned.

  5. Spoon into a serving bowl, top with the rest of the cilantro and serve straight away with tortilla chips or vegetable sticks.

Tips

  • A ripe avocado gives slightly when pressed near the stem. Hard ones won't mash, no matter how long you go.
  • To store, press plastic wrap right onto the surface and refrigerate for up to a day. Scrape off any browned top before serving.
