Method

  1. Bring a large pot of well-salted water to a boil (start it in an electric kettle to save time). Trim the beans and chop the shallot while it heats.

  2. Add the beans and boil until bright green and crisp-tender. Drain and rinse briefly under cold water to stop the cooking.

  3. While the beans cook, melt the butter in a large skillet over medium heat. Add the almonds and cook, stirring, until the almonds are golden and the butter smells nutty.

  4. Add the shallot and cook for 1 minute until softened.

  5. Add the drained beans and toss for 2 minutes until hot and coated. Stir in the lemon zest and juice, season with salt and pepper and serve.

Tips

  • Watch the almonds closely; they go from golden to burnt in seconds once the butter browns.
  • Frozen whole green beans work in a pinch: skip the boiling and cook them straight in the skillet with a splash of water until hot, then add the almonds and browned butter.
