Method
Drain the pineapple and mandarin oranges well in two sieves and pat dry with paper towels so the layers stay neat.
Beat the cream, powdered sugar and vanilla with a hand mixer until it holds soft-firm peaks.
Spoon the pineapple into the bottom of 6 small clear cups, filling each about halfway.
Add a layer of mandarin segments on top, filling to about an inch from the rim.
Top each cup with a swirl of whipped cream and serve right away.
Tips
- Narrow, tall cups show off the yellow, orange and white stripes best.
- Use canned whipped cream to save a few minutes, adding it just before serving.
- The fruit can be layered up to a day ahead and refrigerated; add the cream when serving.
