Method
Pour the oil into a deep skillet to about 1/2 inch deep and heat over medium-high to 350°F. Mix the sugar and coating cinnamon on a plate.
Stir the chopped apple filling with 1 tsp cinnamon. Spoon 2 heaped tablespoons onto the lower third of a wrapper set like a diamond.
Fold the bottom corner over the filling, fold in the sides, then roll up tightly, sealing the last corner with a dab of water. Repeat with the rest.
Fry in batches, turning, until deep golden and blistered on all sides.
Drain for a few seconds on paper towels, then roll in the cinnamon sugar while hot. Let cool for a minute before eating: the filling is very hot.
Tips
- Chop the apple slices in the filling small so the rolls stay slim and seal well.
- Air fryer option: brush with melted butter and cook at 400°F for 8 minutes, turning once.
