Method

  1. Heat the oil in a large skillet over medium-high heat. Add the beef and cook, breaking it into small crumbles, until browned with no pink left. Meanwhile, mix all the spices and salt in a small bowl, and shred the lettuce and dice the tomato.

  2. Tilt the pan and spoon off any excess fat. Sprinkle in the spice mix and stir for 30 seconds until fragrant.

  3. Pour in the water and simmer, stirring, until the liquid has mostly cooked off and the beef is saucy and coated.

  4. Gently crush the chips a little inside each unopened bag, then cut along the long side with scissors and open it up.

  5. Spoon the hot beef into the bags, then top with cheese, lettuce, tomato, sour cream and salsa. Stick a fork in each bag and serve.

Tips

  • Set out the beef and toppings as a bar and let everyone build their own bag. It's an easy way to feed a crowd.
  • Most plain corn chips are gluten-free, as is this homemade seasoning; check chip and salsa labels if it matters to you.
  • Swap in ground turkey or a can of drained black beans for a lighter version.
