Method

  1. Put the sugar and water in a small saucepan. If you're using a vanilla bean, scrape the seeds into the pan and add the pod too.

  2. Set over medium heat and stir until the sugar dissolves completely and the liquid turns clear.

  3. Bring to a gentle simmer and let it bubble, without stirring, so it thickens slightly.

  4. Take off the heat and stir in the vanilla extract and salt. Lift out the vanilla pod if you used one. The syrup looks thin now but thickens as it cools.

  5. Use it warm right away, or pour it into a clean glass jar or bottle. Add 1 to 2 tbsp to a 12-ounce latte, iced coffee or cold brew, or whisk into cream for vanilla cold foam.

Tips

  • Store the syrup in a clean, sealed jar in the fridge for up to 1 month. If it turns cloudy or smells off, throw it out.
  • Adding the extract off the heat keeps more of its flavor; boiling it drives off the aroma.
  • Each serving is 2 tbsp, about one sweet drink. Start with 1 tbsp if you like your coffee lightly sweetened.
