Method

  1. Get the coffee ready. Cold brew goes straight in. If you're brewing espresso, moka pot or instant espresso, make it now and top it up with cold water to 300 ml; it'll cool on the ice.

  2. Fill two tall glasses with ice and pour the coffee over, leaving about 1½ inches (4 cm) of room at the top.

  3. Put the cream, milk and vanilla syrup in a tall measuring cup or jar. Everything must be fridge-cold or it won't foam.

  4. Froth with a handheld milk frother, moving it up and down, until thick, smooth and doubled, like melted ice cream that just holds a trail. No frother: screw the lid on the jar and shake hard for about a minute, or plunge it in a French press 20 to 30 times.

  5. Pour the foam slowly over the coffee so it floats in a thick white layer. Drink straight away while the foam is cold and sitting on top.

Tips

  • Stop as soon as it pours like thick yogurt. Keep going and it turns into whipped cream that sits in a lump instead of cascading.
  • A blender also works: blend on low for 10 to 15 seconds.
  • The foam holds for a few minutes but not hours, so make it just before serving.
