Ingredients
Method
Heat the oil in a large skillet over medium-high heat. Add the onion and bell pepper and cook, stirring, until starting to soften.
Add the beef with 1/2 tsp salt and some pepper. Cook, breaking it into small crumbles with a spoon, until browned with no pink left. Spoon off excess fat if there's a lot.
Stir in the garlic for 30 seconds, then add the tomato sauce, ketchup, Worcestershire sauce, brown sugar, mustard and chili powder.
Simmer, stirring now and then, until thick enough to mound on a spoon. Meanwhile, toast the cut sides of the buns in a toaster or a dry skillet until golden.
Taste and adjust the salt or sugar. Spoon the filling generously onto the bottom buns, add the tops and serve with napkins.
Tips
- Chop the onion and pepper small so they melt into the sauce. Kids who pick out vegetables won't notice them.
- Leftovers keep for 3 days in the fridge and freeze well; reheat with a splash of water.
- Add a slice of cheddar on the bottom bun before the filling for a cheesy version.
