Method

  1. Preheat the air fryer to 400°F. Slice the scallions while it heats.

  2. Spread the frozen tots in the basket in as close to a single layer as you can. Air-fry, shaking the basket every 5 minutes, until deep golden and crisp.

  3. While the tots cook, fry the bacon in a skillet over medium heat until crisp, then drain on paper towels.

  4. Pile the cheese over the tots in the basket (or move them to a foil tray that fits inside) and air-fry until melted and bubbling.

  5. Slide onto a platter and top with bacon, jalapeños, scallions and dollops of sour cream. Serve right away.

Tips

  • Air fryers vary: a smaller basket may need 15 minutes, and crowding makes tots soggy. For a crowd, use two baskets or cook back-to-back batches.
  • The oven works too but takes longer, about 30 minutes with preheating (450°F, 20 to 25 minutes, then 2 minutes to melt the cheese).
  • Most tots and bacon are gluten-free, but some tots are coated in wheat flour, so buy ones labeled gluten-free.
