Method
Whisk the eggs, cottage cheese and salt together. For extra-smooth eggs, blend them for a few seconds.
Melt the butter in a nonstick skillet over medium-low heat. Add the eggs and stir slowly with a spatula, pushing them from the edges, until softly set and creamy.
