Method

  1. Heat the broiler to high. Mix the spices and salt. Cook the beef in a skillet over medium-high heat, breaking it up, until browned with no pink left.

  2. Stir in the spice mix and water and simmer until thick and saucy. Warm the refried beans in the microwave, stirring halfway.

  3. Meanwhile brush the tortillas lightly with the oil on both sides, lay 2 on a large baking sheet and broil until blistered and crisp, turning once. Repeat with the other 2 (the timer is per batch).

  4. Leave 2 crisp tortillas on the baking sheet. Spread with the beans, top with the beef, then the other tortillas. Spread the enchilada sauce over the top and scatter with the cheese.

  5. Broil until the cheese is melted and bubbling at the edges.

  6. Top with the tomato and scallions, cut into quarters and serve.

Tips

  • Crisp tortillas are what make it taste like the original. Broil them until they're rigid and spotted brown; soft ones go floppy under the toppings.
  • Watch them closely under the broiler, as tortillas go from golden to burnt in seconds.
  • To make it vegetarian, swap the beef for a can of black beans and check your refried beans are made without lard.
