Our take on the Starbucks White Chocolate Mocha: a quick melted white chocolate sauce, espresso and steamed milk, topped with whipped cream. Hot in 10 minutes.

Method

  1. Put the 400 ml milk in a small saucepan over medium heat and warm until steaming with small bubbles around the edge, about 4 minutes. Don't let it boil.

  2. While it heats, make the white chocolate sauce: microwave the white chocolate chips and the 60 ml milk in a mug for 30 seconds, stir, then heat in 15-second bursts, stirring each time, until smooth and glossy.

  3. Brew the espresso, or make the moka pot, AeroPress or strong coffee.

  4. Froth the hot milk with a handheld frother for 20 seconds, or whisk it hard in the pan, until foamy.

  5. Divide the white chocolate sauce between two mugs, pour in the espresso and stir well. Top up with the steamed milk, holding back the foam with a spoon, then spoon the foam on top and finish with whipped cream.

Tips

  • The thick white chocolate sauce stirred into the espresso is what makes it taste like the original: sweet, creamy and vanilla-ish rather than chocolatey.
  • Heat white chocolate gently in short bursts. It scorches and seizes quickly, and if it does, a splash more hot milk usually brings it back.
  • Make it iced: cool the sauce with the espresso, then pour over ice and top with cold milk.
