Our take on the Starbucks Iced Caramel Macchiato: vanilla-sweetened cold milk over ice, espresso poured on top in layers and a crosshatch of caramel sauce.

Method
Make the vanilla syrup: stir the sugar and water in a mug and microwave for 30 seconds, then stir until the sugar dissolves and add the vanilla.
Brew the espresso or strong coffee. While it brews, stir 1 tbsp caramel sauce into the vanilla syrup if you like it sweeter, or keep it all for the top.
Divide the vanilla syrup between two tall glasses, pour in the cold milk and fill each glass almost to the top with ice.
Slowly pour the espresso over the back of a spoon onto the ice so it sits on top of the milk and drifts down in streaks.
Drizzle the caramel sauce over the top in a crosshatch pattern. Serve unstirred and stir as you drink.
Tips
- The layered look is what makes it taste like the original: you get vanilla milk first, then espresso and caramel as you sip. Pouring the espresso slowly onto the ice keeps the layers.
- If your caramel is too thick to drizzle, warm it for 10 seconds in the microwave.
- Swap in oat milk and a dairy-free caramel for a dairy-free version.
