Method
Heat the air fryer to 400°F. Add the popcorn chicken in a single layer and cook, shaking the basket halfway, until crisp and piping hot all the way through.
Meanwhile, bring the water, milk, butter and a pinch of salt to a boil in a saucepan. Take off the heat, stir in the potato flakes until smooth and fluffy, then cover to keep warm.
Whisk the gravy mix into the cold water in a small saucepan. Bring to a boil over medium heat, whisking, then simmer until thickened.
Microwave the corn in a covered bowl with a splash of water until hot, then drain and season with salt and pepper.
Divide the mashed potatoes between two bowls. Top with the corn, then the popcorn chicken, pour over the gravy and finish with the cheese so it melts into the hot gravy.
Tips
- The order is what makes it taste like the original: hot gravy over the chicken melts the cheese right in, so add the cheese last.
- No air fryer? Bake the chicken at 425°F per the package, but add about 15 minutes for preheating and baking time.
- Use real leftover mashed potatoes if you have them; warm them with a splash of milk.
