Method

  1. Pour the oil into a large, deep skillet so it's about 1/2 inch deep and set it over medium heat to warm up while you prep. Keep an eye on it and turn it down if it starts to smoke.

  2. Whisk the egg and milk in a bowl, add the chicken and toss to coat. In a second bowl, mix the flour, salt, both peppers, paprika, garlic and onion powder, celery salt, thyme, oregano, ginger and mustard powder.

  3. Lift the chicken out a few pieces at a time, let the excess egg drip off, and press firmly into the seasoned flour so every side is well coated. Shake off the excess.

  4. Check the oil is ready: a pinch of flour should sizzle straight away (about 340°F). Fry half the chicken, turning once or twice, until deep golden and cooked through, with no pink in the middle of the biggest piece.

  5. Drain on a rack or paper towels and fry the second batch the same way, letting the oil come back up to heat for a moment first.

  6. Sprinkle with a little extra salt while hot and serve straight away.

Tips

  • The white pepper is what gives it that familiar takeout flavor, so don't skip it. A little MSG (½ tsp in the flour) gets you even closer.
  • Keep the oil at a steady sizzle. If the coating browns before 4 minutes, turn the heat down a notch so the middles cook through before the outside darkens.
  • Great with coleslaw and tater tots or in a soft roll with mayo and shredded lettuce.
