Ingredients

  • 4 large eggs
  • 1/2 cup vegetable oil
  • 2 cups sugar
  • 1 tablespoon vanilla extract
  • 2 cups flour
  • 1 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup powdered sugar

Instructions

  1. In a large bowl whisk together eggs, vegetable oil, sugar, and vanilla extract until smooth.
  2. Add in unsweetened flour, cocoa powder, baking powder, and salt until just combined.
  3. Cover with plastic wrap and refrigerate for at least 2 hours.

  4. Preheat oven to 350 degrees and add parchment paper to 2 baking sheets.
  5. Add powdered sugar to a small bowl.
  6. Using a 2 tablespoon cookie scoop, scoop the cookie dough directly into the powdered sugar.
  7. Roll in the bowl, then place gently onto the cookie sheet.
  8. Bake for 11-13 minutes.

  9. Let cool for 5 minutes before removing from baking sheets.
